Is it safe to say the later in the alphabet the cutting listing is the tastier or more coveted?  For example, F is better than A?  Or is it just a matter of what is hard to grow etc so may be more rare for that reason?

no its neiither you mention but just my personal opinion.

I believe and could be wrong it boils down to his avaiable scion for the current year.

Take for example Black Maderia taste wise according to Jons post and i do not doubt he really really likes this fig and its in the "A" class number 4036 A
