Very good tasty Turkish figs, got them at a Whole Foods.
As you can see, the size is huge. The dry Black Mission and Calimyrna size is about 1/3rd.
How large are the fresh Turkish figs?

Those type are the best dried figs I've eaten although some can be fermented and have an off taste. The fresh figs have to be huge, like ~150 grams.

I'm wondering if the fermented ones were improperly handled or perhaps had slower drying conditions.

We've tried all the dried varieties we can find, and the dried Turkish are basically the best, except for the insects and fermentation problems.  We just had our first package of dried Sierra, and my wife thinks they're better than the Turkish.  They are quite sweet, have a very nice taste, and we had none of the problems of the Turkish.  They must not have the sugar content of the Turkish though, since sugar doesn't seem to exude and crystallize like the Turkish.

Anybody knows the name of the Turkish variety?
They are in a high demand for sure, the bin is always almost empty

They should be in high demand, they're way better than dried Black Mission.  We have a call in to Natural Grocers HQ in Colorado for the name of the variety..  Hope to learn soon.

The Turkish are my faves. I have tried the Mission and the California figs but like the Turkish best.

I'm sorry to say everybody, but after weeks of waiting, all I can get out of a couple sources is that they are Smyrna figs from the country of Turkey and they're clip size number 3 :)  (I guess that's the sorting size..)  Maybe the growers don't have an English transliteration of the variety name..

The figs are positively pollinated (sinking seeds), crunchy and tasty.

The wasps
The Sun or home driers of all types and sizes
plus many good ideas from the forum

but as the Turks suggest.. They MUST be pollinated

could be a sweet, easy and inexpensive project ( in your shoes I would start now!!)

Costco has 40 oz bags of dried Turkish figs. I have not tried them. So this is not an endorsement

The dry figs are very large and appear to be light, so the fresh figs should be 5 cm in diameter on average. What variety figs this?

Yes this is the most famous one and used as commercial dried figs.It needs pollination and wasp .do you have wasp in your area ?

Yes, I am in California, the wasp is everywhere around me, all my figs are pollinated and the seeds germinate really well.

Sarilop (Lob injir)  gave birth to Calimyrma..so you have a lot of them around you.
