Taste is fantastic,internal texture is jammy while the skin still has some crunch going into the neck.
I saved 3 gallons of the Preto and Strawberry Verte during the height of the season when the dehydrator was overbooked and I was overrun by them.Should have froze them all.

Yes! I found that varieties with similar textures like Black Mission hold up surprisingly well. 

Meanwhile, Trader Joe's sells frozen Calimyrnas that are soggy and really only good for cooking, I think. 

But great looking spread you’ve got there.

Thanks for the heads up. Me and the wife were talking about how to have figs and strawberries at the sametime. Strawberries in Louisiana ate extra special. Ponchatoula strawberries are the best. we want to make strawberry fig jam. Your frozen fig look awesome.

Paul, what a great spread!! Yes, freezing them is a good idea. I hunted figs down in October and found them in a tiny shop so I bought about 7 baskets ate at least one basket full on my way home then froze the others. I eat them every so often...like right now when im salivating!

~New to growing figs, I currently have tiny fig plants which are supposedly Little Ruby, Violette de Bordeaux, Desert King, and Petite Negri. I hope these were accurately labeled!
Now rooting LSU Gold and Purple, Celeste, Panache, Peter's Honey, and Unknown Varieties from cuttings, thanks to generous forum members.

Figs on my current wish list (along with any others recommended):

@Joe,they're frozen whole,no special handling just washed.
As levar mentioned the best candidate for this treatment is a thick skinned fig,
the texture will be much better and they'll hold form.

These were beyond dead ripe when frozen and had already began to sag,otherwise they'd look more like Vlad's.

It's probably a good idea to take these out of the freezer a couple at a time instead of the whole gallon at once.<G>

Awesome spread Paul, that cheese looks delish too. Those Preto's look just as jammy as they look when fresh. Thanks for confirmation that figs freeze well, even though i doubt i will be in excess this year, maybe next year :)

Now i'm hungry for figs and cheese.

WOW!  Great stuff.  Those little Preto cuttings are doing well for me and already have put on 2 main-crop figs each under my grow lamp... so thanks again Paul.  Your strain is a very good grower!  I have a vacuum Food Saver that I use for game and fish (see my avatar hehe)  Perhaps I should enlist it to preserve some figs?  It might squish them too much though.   Regarding your method: Are you just placing the ripe figs in a freezer bag and just tossing it in the freezer?  They sure look good.

I have frozen figs with great success too. just let them defrost to room temp. not even close to dried figs for flavor. I will take frozen over dried any day. it still retains that fresh figgy taste unlike dried. they do get a little loose or soft, wouldn't say mushy. I have had mine in the freezer for 4 months, they are starting to lose a bit of flavor now. I double bag them and add a napkin. I take 1 out every few weeks and enjoy.

I think this method would be a good way to ship and market figs. why aren't there frozen figs at the big box stores. they can pick them at peak ripeness and freeze them.
