Down in Cajun country we use an ice chest , what some call a cooler. The water is heated in a crawfish pot and poured in the cooler. The water temp drops about 2* an hour. Regular zip lock bags with meat are placed under water in sink or bucket to allow air bubbles to be released if you don't a have a vacuum sealer.. a thermometer is needed to make sure the water temp is correct,, 135 to 145 Fahrenheit depending on your preference . One hour is usually long enough for 1" thick steaks. Then sear each side on a very hot grill or skillet.
Ruth's Chris and other restaurants steaks are done similar to prevent juices from escaping. Many different seasoning and marinades can be used.

Hello Jeffrey , I don't post much at all but I've been trying to identify many figs with the help of all the people on this woderful forum and their pictures . LSU has Ithaca listed as a synonym for what I call Hardly Chicago. I see you are in Lafayette,,, Louisiana I assume, since you are an Ortego. I live in Sunset . I've been trying to identify a Fig labeled Ithica that I received from a man who had connections with LSU years ago . I have sold this Fig to others and I misspelled it Ithaca. It is very close to an LSU Scott's black . I am waiting for my tree to mature a few years after its first winter knocked it down since it was growing and green when the first freeze hit . Then I will be able to tell what time of year it ripens and the True Color of the pUlp. As a juvenile the pulp was not as dark red as Scott's black . It can also get many figs as large as LSU gold. I'll attach a few pictures of my Ithica. Swing by sometime this summer and eat some!

Yes, I got that,,many are fighting ants,,permethrin can kill plants and animals, horses included. Proper dosage is a must

Many people use corn meal for ants, dry conditions . Find it to be 90per cent effective. 9 out of 10 mounds eradicated.
Be careful with permethrin. Horse solution is .004 or .ooo4 . I get the termite concentrate and make 200 gallons with a quart. We have many horses..too many.

Wills. Next year I will take pictures of citrus and blueberry flowers if we get another hard freeze, got down to 15 f this year but only for a day or two,,not sure how things do in the North Pole like up pass arkansas. Blueberries had flowered water applied , ice coating for 12 hours, saved the berries and the citrus. I think you and me should team up , with your education and my brains we could accomplish great things. Just kidding

Wills C, ice doesn't go below 32 f, we turn our water off after an hour, plants do just fine. It's pain to do this at 2 am but it saves the blueberries, citrus and why not figs. We do it buddy, it works great. Every time

Citrus growers cover their orchards with water,sprinklers, just as temps drop to freezing. The ice covering protects the plants form wind and actually insulates the trees from cold damage. These temps usually last for hours but sometimes a few days.after it warms up the ice is watered off the plants . Fig trees can have a better chance if planted in the ground where temps of roots do not freeze. Top dress the ground with hay, mulch, etc can further insulate roots. Even though the tree freezes the roots on an established tree will eventually push out another tree,,sometimes this can take months or years. Ask an old timer up there how many times that very old tree resurrected . I would examine the rootstock of frozen potted figs thoroughly and if you can find living roots , trim off the brittle and give it a summer to come back.

Same situation with several dozen plants here in south louisiana. 2 weeks ago We cut them back to living wood, some only
Half inch, gave them shot of Miracle grow ,put them in sun and already half of them are leaf n out.!
We have Breba on trees here and frost might be on the way because the pecan trees are holding back. So I would wait a while in your zone,,

Thanks for the advice . I really wanted to save the b Madeira since it was just one . And I don't have any other. I was told to bury them .and really wanted to have some wood above ground. I did place some in garbage bags, inflated and taped shut. Pecan trees have not leafed out yet so we still have frosts coming. I will watch em and try not to kill them with kindness.

I did give them a dose of miracle grow but I like the dome, heat set up. I will definitely get that done tomorrow

Can anyone tell me how to bring back young potted figs from what looks like freeze damage? I was helping an older gentleman ,with health issues, clean up and well he had a few dozen plants we thought were gone.
After inspecting them many had good roots and some living wood , less than an inch, ..my question is should I bury the short trunk or should I leave it above ground. There is no node on the good wood. Any advice would be greatly appreciated.. Terry from sunset,la.. Oh the varieties are smith,Scott's black, hollier,Santa Cruz,Flanders,black Madeira,orphan..

It could be a Jack Thomas quarter pounder,found in Georgia,.. Maybe weigh some this year and see if you have any whoppers.
Sure would be interested having a tree to grow those big figs ,don,t matter what they taste like..
