Removing the (supernatant) liquid after cooking the figs for a few hours gives you a nice amount of fig juice... plus it cuts the cooking time in half.  What remains can be pureed and canned.
Fig juice is really good.

Hi FMD,
Man, they could have been the biblical eightieth Egyptian plague ! :P . Where are you going to store all those pots ?
Next time, snap a pic before the harvest - if you want. I'd like to see where the two sisters do hide so many figs !
I think I need to up one zone and change to zone8 ...
