Filter Sun?

I now have my trees in a cage from birds, the figs are getting really large and the birds are watching.

Will this netting cause filter sun and slow down ripening?

There's so much heat in Texas that even if ripening is slightly delayed it won't be by much. Last summer I had a net on my Col de Dame Blanc ( late variety in ground) all summer long.
Instead of ripening in October it ripened in November which I thought was later than the previous year, but the birds got none.
Since your trees are in pot, doing this might help prevent root overheating if in full sun. If they are in partial shade then I would put a net close to the ripening season in order to maximize light.

I would like to decrease both pot heat and water evaporation loss by using a 70% white net. 70% is the only one that can withstand the winds in my balcony..

You mean it lets through 70% of light? That is fine, especially in your climate, assuming a southish balcony with mostly full sun.

The opposite the more the percntage the more shade... But maybe the hite color is better?

30% nets give the least shade and are standart for fruit treea among growers, but they tend to degrade faster from wind etc׳.

Well, supposedly a fruiting tree just needs 40-45% of sunlight to fruit, and 70-75% sun being optimal. Blocking 70% of light might be too much for a fruiting plant. One way to find out.
