I wouldn't cut anything. Just tug the figs that are still hanging on the branches. The leaves will come off on their own.
Just wait two more weeks, and if some are still hanging on, then tug them leaves and they should come off.
I've been doing that with my trees too.
I have four fig-trees that looked like Christmas trees - almost no leaves but lots of balls (8/10 per stem) still hanging on the branches like they were decorated ... But I've been pulling those off. I need to do it gradually as the figs will ooze latex and my hands get sticky.
One needs to be careful not getting too much sap on the skin - not that I already got a problem with that ... I just don't want to risk it, I'm staying safe. So It will take me three or four weeks to knock all figs - but that's fine.
I just can't let them stay on the trees the whole winter as the fruits may rot and kill some stems. Some fruits will turn into insects hides, and I don't want that either. I already knocked 4 that were chewed and turned into burrows.
