To my taste, Col De Dame White is in a class all of its own. It seems to have good tasting characteristics from a couple of groups.  I have not yet been able to eat enough of them at one sitting where I could identify just what it is I like about it. All I know is that it is one delicious tasting fig. Maybe it belongs in a special Dessert class of figs.

Regarding rankings in each taste profile group: I'll pass for now. If I gave a ranking, it would most likely change this coming season. FYI...I will have a another thread again this year that will describe the taste and fruiting characteristics of the figs that I grow.

Oh how I wish I lived somewhere where people hosted fig tastings.  With wine pairings, of course.  If anyone knows of such a thing in driving distance of Yorktown, VA let me know!

Hello All, I'm new to the fig seen so a beginner. Wondering while reading all about the tastes of different figs if someone could help with maybe listing them in an order of ripening stages. What I mean is earliest fig that has the best taste, then mid seasons best taste, then late seasons best taste. I live in South Jersey area. The reason I ask is so you can have a long season for eating figs. Hope this is not a tough question? Luke

Your are very lucky. Herman2 has trialed many different type of figs in New Jersery. Read all of his posts and you will learn a lot about growing figs in your area. IMO, he is an expert on figs.

Welcome to the forum.

Dan is right in that you are fortunate to live in the same area as H2. He has put alot of time (years) and effort into learning what grows best for him in the Jersey area. So reading his posts will take you a long way in determining what will grow and produce best for you there.

Congratulation,Jusalda,for managing to get ripe Col de Dame In Illinois.
I also had only one ripe fruit from My Col de Dame grise,and like you say,it is the best tasting.
I had many fruits but they did not ripe properly this Summer because of lack of sun,and out of control heavy continuous rain,in Aug,and Sept.

My Col de Dame was ripe on Oct 23rd at that time days was much cooler ,I wonder what the fig would taste ripend in hot wether like California :)

Good that you wrote down the date it got ripe:Oct 23.
Mine must have been Oct 10 but I am not sure as I did not write it down,nor I remember exactly.
What I wrote down,is in 2007,Col de Dame white started getting ripe fruits on September 10,and it had a half dozen ripe despite the heavy Fig mosaic virus it was infected,with.
Now I have healthy trees,but much younger because I sent to California the old tree.

Held my Maderia back from the fig shuffle this spring after dieback to ground doing fig shuffle the previous season as it was younger and did not like that .

This season -
 i left all figs on plant on purpose " thats me" and just let it grow wild. 
One risks killing a younger plant for obvious reasons << leaving full crop>> when young and i do not suggest it .

It grew well for me this season with a little care .

With plant age and my growing experience , the fig shuffle, proper fig - limb pruning, cheating and growing in pots in the full sun , i'm confident the figs will ripen somewhat similar to my other plants as it ages in future seasons.

This year I like Zingarella, Sal's Corleone, White Greek and I don't sure about the right name of this one, seller call this one New Jersy, this one remind me Mareleise VS, but teste more rich and unike.. And Nero was very good too..

My... that Maderia looks so good, Dieseler. All these pictures make me hungry for some tree ripened figs right now... :)  By the way, what is that fig with the different color leaves in the picture you have? So pretty. Reminds me of lemon thyme because of the colors.

Olga made the Zingarella sound just as good too. Sigh...

The more I see, the more everything looks so good. Making it so hard to choose.  :( I thought this list was going to help us make a short list of varieties we want to find but ah... that is not to be then... Nevertheless, thank you all for sharing this with us. :)

VdB is all i need. just need to figure out how to keep water off the container when it rains while the figs are swelling. i might cover the top of soil with plastic this year once the figs start to swell.

I have to agree with Pete.
So far, VDB has been the best for me, both in taste and number of figs that ripened fully.

I do have quite a few 2nd and 3rd year old varieties so this is subject to change.
I even have a few light colored varieties LOL.

Can someone tell me where I can purchase the Louisiana Honey Fig tree in New Orleans. I want to plant one in my yard and can't find a nursery that has one.

This is an old thread. As, the years go by, the best tasting fig one year, may not be best tasting the next. For me, I have a lot of best tasting figs. It's sort of like asking what's your favorite kind of ice cream? Well, how many kinds do you have? Okay, divide that by two. That's the minimum number of favorites that I have. Based on taste. That may be roughly accurate.

Too many high quality ones but most memorable ones are Gypsy, I-258, RdB, Enrico, Jack Lily,
O'Rourke, No name Dark & Granthams Royal.

@ mike, the only order from my list is Black Maderia.  It is the at the top!  However, the sweetness and richness from Votata and Peter's Honey is amazing!  How amazing?  Well after just one bite, it will make you wanna crouch down in a corner in a fetal position and suck your thumb!  They are that good!
