O.K, it is about 11:00 pm here in Tampa, dark outside. I log in and what pictures do I see. Instant hunger. I went back outside using a flashlight to locate a couple of Celestes and a Monstrueuse that I knew were almost ripe. You know, at the state of just one more day. Yep, I had to have a snack after seeing those photos. Now wondering what to have in the morning. Thanks for the photos FMD.

The combination of fig sweetness, the savoriness of cheese and the crunch of crusty bread grilled hot is incredibly good. I think this will be a staple of mine during fig season.

Sorry, I forgot to mention the cheese.
Laughing Cow cream cheese and an Irish type of cheddar cheese were used, but I bet even Cheese Whiz would taste good in this recipe.

Yes, Jimmie, the figs in the sandwich are the celestes from the huge tree in the back 40, which are probably being pecked at by the mockingbirds as we speak. 3 of the whole figs are NJ Reds.

Any chance you can tell us how it would taste with some ICE COLD Grolsh?
Do you think it will go well with some lager? Maybe a Foster?

I haven't had a beer in a month and half. I have less than a week to go with the meds.

Rafed, EVERYTHING goes better with a nice cold one... but, to be absolutely sure, when I get home from work tonight I'm gonna make myself another grilled fig-cheese sandwich adding a few thin slices of prosciutto this time and chase it down with a chilled Sweetwater 420.
And because I am such a nice guy, I'll have a second  Sweetwater thinking of you. I hope you appreciate the hard work I'm going through to answer your question. :))

May I suggest you try adding a single (very thin) slice of Parma prosciutto on one of next fig sandwiches and let see how much it adds....?

BTW
Most publix's that carry Boars head brands will carry the Parma prosciutto...

Rafed, Sweetwater is a local Atlanta Brewery.  Next time you are down South, you should try one.

Di Parma prosciutto mm mmm good my favorite .

Dark type figs dead ripe freshly eaten off the tree whole mm mmm good.

Ciabatta bread dipped in good olive oil sprinkled fresh grated parmesan cheese , sea salt , fresh crushed black pepper, Italian seasoning mm mmm good.

Life is too short but good.
