One of our local Mom & Pop stores in the area was having a meat sale . So I bought some thick cut Baby Back ribs last week.  I  purchased 3 big containers of Desert King figs at the Olympia Farmers Market yesterday , since all of my trees are still to young to produce figs .

 I smoke my ribs ala Johnny Trigg. Also known as the 'Texas Crutch' or '3-2-1 Ribs' You smoke the ribs for 3 hours then wrap in foil , add a liquid . Put the ribs  back on the smoker for 2 hours , Final hour , unwrap . Put ribs back on the smoker for 1 hour.
     For Trigg ribs the liquid is Parkay Margarine, Brown sugar, Honey and Tiger Sauce. I substituted fresh Desert King figs for the Brown Sugar and Honey . I pealed 8 large figs, added 1 Tbl of Agave nectar and blended in my magic bullet mixer .  Added the Margarine and tiger sauce and put the ribs in bone side up . Folded the foil and the pic's are the end product .  The figs make for a nice sticky glaze .

Cody, looks like you had a good dinner tonight. Fig do have a good sugar and structure to hold as a thicker sauce.

JD is highly against smokers, and if we get one, it will be me running it!  He can't tear himself away from his beloved sports (mine too) to monitor the smoke, but I only care about MY teams, MY players.......... and MY ribs!  He does sit down and eat, however.... 

I think your dinner sounds amazing!

smoking is the way to go. but margerine? not for me. you'd be better off with any untreated vegetable oil.

Daaaang! I think I just drooled a little. Good work. I'm going to have to try that method for rib prep. I nailed ribs the first handful of times I made them, but the last few times I really felt like I could have done better. Thanks for sharing.

Suzi,  I built my smoker for under $50 . It is pretty much set it & forget it. And with a Wireless, duel probe thermometer. I can monitor both smoker and meat temps while I watch the Games .

Leon,
        BBQ Brethren Has a thread on their site. that you can find any and all information on building your own UDS or 'Ugly Drum Smoker' You can make it as bear bones as you like or put all of the bells and whistles on it . You can even buy a UDS kit with everything you need.  But I give you fair warning now . The thread is a little bit daunting . At last count it was at 673 pages.
