I have both, but only one will go in ground and the other will go in the pot, which one of those 2 figs is better in taste and sweetness?

They are two different takes of figs.  One is a bordreaux, the other is a Malta sugar (I prefer to leave honey to kadota LSU Gold etc).  They do different things to the palate.  What do you want, richness sweet acid or sweet figgy?  I think that neither are too hardy where you are.

Rooting:  Smith, CDDB--this pretty much means I have my fun tries (tho' important since they are truly desirable), and only interested for this year: Gulbun, BM, 187-25, or something wildly exotic or precious that nobody has any good reason to send me.

don't have Celeste, but Negronne/VdB does very well in container.

Celeste will have a better chance of surviving in the ground where you are.

I agree that Celeste would be the best in the ground. Most productive of the two for me at least. I love the flavor of the both varieties though.

Celeste will have a very sweet sugary flavour (Haven't tasted negrone yet) and is supposed to be hardy.  Some Celeste Variants will drop fruit easily but I don't know why.

In your are the Celeste would best be taken in ground and sweeten the soil with either crush coral or limestone. Many have been able to grow this fig outdoors with no protection.

The Negronne/VDB will not survive outdoors in your winters and for that reason I would recommend this be one you keep in a large pot that you are still able to carry.

Celeste in the ground, Negronne in the pot.  Negronne will need winter protection where you are.  Celeste has a better chance surviving outdoors.  Keep you pH 6.5 or higher on both.  Negronne is likely to have a smaller overall profile over time.  Both are different in taste as state by others.
