What to do with some of those extra figs? With the hot summer upon us, try making ice pops. Very easy - only odd thing you'll need is some sort of mold, and some craft sticks for handles.

Today I found a number of figs as I was watering. I ate as I went. But when I got to the Atreano (RR), it had a number, and they are not my favorite fresh eating figs. There were 7 that were ready, so I picked them.

I've been making ice pops recently (Peach, strawberry) and have seen recipe for fig ones too. I just made a quickie batch.

Put in blender: (note, this recipe does not make very much - 6 small pops)

7 figs trimmed (more would be better)
1/3 C milk (I used almond milk)
2 T cream (for richness, but can be omitted.. or increased)
2 T sugar or other sweetner to taste. I used splenda
grated zest from about a third of a lemon
1 tsp vanilla
2 tsp white balsamic vinegar
small dash of salt

After blending, pour into pop molds, or small dixie cups and put in freezer.
After about an hour (set a timer), put a stick into each pop, and freeze for a few more hours till solid.
Enjoy.

My first batch is currently freezing, but the mix really tasted good. I can't wait till I have extras of really good tasting figs. And more than just 7.

I also ordered some 'official' popsicle molds, and they should be here in a week or so.
