Andy, parsnips grow great here. I grew some one time and was astonished by what came out of the ground when I dug them. Probably the biggest longest tap roots I have ever seen. I didn't grow up eating them so I don't really know what to do with them, I tried them a few different way. Until I find a recipe I really like them for I won't dedicate garden space for them.
