@ jdsfrance this thing is in syrup... this company makes the best fruit preserves.
if you can find it, try their sour cherry!!! 

  take a look,  This is a Greek recipe for unripe figs.   It maybe what's in your jar?,  It calls for vanilla,  I'm surprised not lemon,    What do you think?

it calls for lemon (so the syrup will not turn to sugar... dry up)
the vanilla is for flavor

Getting off topic, but had to try it and agree it's very good! :)

 

wow i am glad you liked it.
its a bit much$$ for icecream topping but my wife and i love it.

If you like cherry and want to stick with figs, try Unk. Pastilliere. They taste like sour cherry for sure.
