If it is a Pingo de Mel, which I believe it is, being a honey fig it will hardly turn red inside. This variety is a Common type and very popular in Portugal Here you have two pictures of the genuine Pingo de Mel, picked earlier this Summer. In our climate, this variety keeps ripening figs from late June through Oct/November

Although being also a honey type fig, Kadota is not the same as Pingo de Mel.

Francisco, it sure looks like a pingo de mel. I have a pingo de mel that looks very much like that one . It came directly from Portugal
Only difference mine has the classic very light yellow pulp color. The one here is light pink . But it seems to be the same familly of fig, leaves and all.
